Thermoreversible gelling agent that comes from organic production of red algae, cold and hot gelling applications, clean cut. Translucent gel but not transparent. It is not necessary to add any substance to form the gel. Good compatibility with sugar. Suitable for vegan and vegetarian regimes
How to use:
Three necessary steps: dispersions, hydration, solution.
Disperse in water, stirring and heat to boil (100ºC), until its complete
dispersion. When it cools down, it gelifies. Agar agar gelatin maintains its
texture at room temperature.
